Spicy Noodle Soup

You will need:

  • 1 head of broccoli, separated

  • 1 L of filtered water

  • 2 tbsp of vegetable broth powder

  • 1 tsp garlic, chopped

  • 1 tsp ginger, grated

  • 1 leak, sliced

  • 200 grams asian noodles

  • 1 bell pepper, julienned

  • 2 carrots, julienned or sliced

  • pinch of sesame seeds

  • chili flakes/ or fresh thai chili, chopped

  • 3 tbsp tamari

  • 1 tsp onion powder

  • 1 tbsp miso paste

  • 2 tbsp sesame oil

  • 1 tbsp fresh lemon/lime juice

How to make it:

  1. Boil 1 L filtered water in a large pot.

  2. Add vegetable broth and stir well.

  3. Then add miso paste, tamari and the listed spices and stir well again.

  4. Let that simmer for about 2 minutes, then add the garlic, ginger and leak.

  5. Add the noodles and the sesame oil at this point and bring to a boil.

  6. Lastly, add the washed vegetables and cook the soup on medium heat for about 15-20 minutes.

  7. To a soup bowl, add some of the spicy noodle soup and garnish with some fresh greens and sesame seeds.

  8. For extra freshness add a splash of fresh lemon or lime juice before serving.

  9. Enjoy!
