You will need:
1 head of broccoli, separated
1 L of filtered water
2 tbsp of vegetable broth powder
1 tsp garlic, chopped
1 tsp ginger, grated
1 leak, sliced
200 grams asian noodles
1 bell pepper, julienned
2 carrots, julienned or sliced
pinch of sesame seeds
chili flakes/ or fresh thai chili, chopped
3 tbsp tamari
1 tsp onion powder
1 tbsp miso paste
2 tbsp sesame oil
1 tbsp fresh lemon/lime juice
How to make it:
Boil 1 L filtered water in a large pot.
Add vegetable broth and stir well.
Then add miso paste, tamari and the listed spices and stir well again.
Let that simmer for about 2 minutes, then add the garlic, ginger and leak.
Add the noodles and the sesame oil at this point and bring to a boil.
Lastly, add the washed vegetables and cook the soup on medium heat for about 15-20 minutes.
To a soup bowl, add some of the spicy noodle soup and garnish with some fresh greens and sesame seeds.
For extra freshness add a splash of fresh lemon or lime juice before serving.
