Sweet & Sour Asian Udon Noodels


You will need:

  • A packet of udon noodles (other egg-free asian-noodles will work too)

  • 1 red bell pepper (julienned- cut into fine stripes)

  • 2 carrots (julienned- cut into fine stripes)

  • 1/2 cup chopped leek

  • 1 small broccoli head, cut into chunks

  • 1 tsp ginger powder or very finely chopped fresh ginger

  • 1/4 cup low sodium soy sauce or tamari

  • Juice of 1/2 a lemon

  • 1 cup of fresh or canned corn

  • Pinch of garlic powder

  • 1 tsp of agave sweetener

  • 1/2 cup warm water

  • Chili flakes

How to make it:

  1. Cook the udon noodles as instructed

  2. To a medium pan, add all the vegetables and steam these covered with a lid on medium heat for about 10 min.

  3. Then add the ginger, garlic, chili flakes to the vegetables and stir well.

  4. Mix together the soy or tamari sauce, lemon juice, water and agave sweetener in a bowl and add to the cooked udon noodles.

  5. Combine the noodles and the veggies. (Add more spices if preferred).

  6. Place into a bowl and garnish with some fresh herbs or sprouts.

  7. Enjoy!
