Aioli Spaghetti


 

Sugar free

Egg free

Dairy Free

Soy free

 

What you will need:

  • A packet of whole-wheat spaghetti

  • 10 cheery tomatoes sliced into half of quarters

  • 10 mushrooms of your choice cleaned and sliced

  • Some fresh greens ( spinach, lettuce...)

  • 3 cloves of garlic chopped finely

  • 1 cup of olive oil

  • 1/2 cup of chopped leek or scallops

  • Pinch of salt

  • Pepper

How to make it:

  1. Add the spaghetti to a large pot of boiling water. Add a pinch of salt

  2. In a small pot heat the olive oil and add the garlic and leeks. (don't let the olive oil get too hot)

  3. Sauté the tomatoes and mushrooms in a medium pan with a bit of oil or water and add some salt and pepper.

  4. Rinse the cooked spaghetti with cold water when cooked (about 10 min) then add back into the large pot.

  5. Add the garlic oil that you made earlier and combine with the spaghetti on low heat.

  6. Place on a serving plate and add the mushrooms and tomatoes.

  7. Garnish with some fresh greens and pepper.
