Lentil Chili Sin Carne


It's cold and rainy outside?

All you want to do is cuddle up in some warm blankets and drink tea in front of the fireplace?

This is the perfect dish for such days. (And any other day if you ask me)

Try this super easy to make, warm and delicious comforting chili sin carne with a twist.

Not only are lentils a great source for protein but they also add amazing flavor to every dish.

 

Vegan

Egg free

Gluten free

Dairy free

 

What you will need:

  • 3 diced small potatoes

  • 2 cups of lentils

  • 2 diced carrots

  • 3 cups of fresh tomato sauce

  • Pinch of salt

  • Pepper

  • 1 tbsp vegetable broth

  • 2 cups of water

  • Chili flakes or fresh chili

  • Thyme

  • 2 diced cloves of garlic or garlic Powder

  • 1 diced red onion

  • 2 cups of rice

  • 5 cups of water

  • Oil of choice

How to make it:

  1. In a medium pot, boil 5 cups of water and add the rice. Cook the rice until soft for about 20-25 min.

  2. Meanwhile, add some oil to a large pot. When hot add the diced onion and garlic and simmer until gold.

  3. Add the carrots and simmer for 5 min.

  4. Add a pinch of salt+pepper and sprinkle in the thyme and chili flakes.

  5. In a Small pot, bring 2 cups of water to a boil and mix in 1 tbsp of vegetable broth. Then turn off the heat.

  6. Now, add 2 cups of fresh tomato sauce to the carrots and onion mixture. Let It cook for 5 min and then add the lentils.

  7. Next, add the vegetable broth that you made earlier. Mix well. The consistency should now be quite liquid, but don't worry, the vegetables will soak it up while the stew cooks.

  8. Lastly, add the potatoes to the stew and then let it cook for about 25-30 min or until the potatoes are nice and soft.

  9. Drain the rice. Then place both the stew and the rice into the serving bowls.

  10. Top it all of with some fresh herbs like basil or chives.
