Red wine Chili


I must admit I'm not a big fan of wine. I rarely drink any alcohol but red-wine in chili, oh man, that's something out of this world. It enhances the flavor and makes it even more warming than it already is. This dish is perfect if all you want to do is cuddle up in some warm blankets in front of the fireplace. The best thing is, you only have to use large pot for the entire dish, which means its a real lifesaver if your too lazy to clean up.

What you will need:

  • 3 diced small potatoes

  • 3 cups of red kidney beans

  • 2 diced carrots

  • 2 cups of fresh tomato sauce

  • Salt & Pepper

  • 1 tbsp vegetable broth

  • 1/2 Cup of red-wine

  • 1 cup of water

  • Chili flakes or fresh chili

  • Thyme

  • 2 diced cloves of garlic or garlic powder

  • 1 diced red onion

  • 2 cups of rice

  • 3 cups of water

  • Oil of choice

How to make it:

  1. In a medium pot, boil some water and add the rice. Cook the rice until soft for about 20-25 min.

  2. Meanwhile, add some oil to a large pot. When hot add the diced Onion and garlic and simmer until gold.

  3. Add the carrots and simmer for 5 min.

  4. Add a pinch of salt+pepper and sprinkle in the thyme and chili flakes.

  5. Dissolve 1 tbsp of vegetable broth in 3 cups of water.

  6. Now, add 2 cups of fresh tomato sauce and 1/2 cup red-wine to the carrots and onion mixture. Let It cook for 5 min and then add the kidney beans.

  7. Next, add the vegetable broth that you made earlier. Mix well. The consistency should now be quite liquid, but don't worry, the vegetables will soak it up while the stew cooks.

  8. Lastly, add the potatoes to the stew and then let it cook for about 25-30 min or until the potatoes are nice and soft.

  9. Drain the rice. Then place both the stew and the rice into the serving bowls.

  10. Top it all of with some fresh herbs like basil or chives.
