You will need:
2 cups whole grain flour
3/4 tbsp fast-acting yeast (~1 packet or 2 1/4 tsp)
1 1/2 cups (360 ml) warm water
1/2 tbsp salt
1/4 cup flax meal
3 tbsp flax seeds
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
4 tbsp chia seeds
1/2 rolled oats
1 grated carrot
2 tbsp maple syrup
How to make it:
In a bowl combine warm water with the yeast, salt, flax meal, maple syrup, chia seeds and stir well.
In a large mixing bowl combine all the dry ingredients. (Flour, flax seeds, sunflower seeds, oats, pumpkin seeds and carrot.) Mix this well with a whisk.
Then add the yeast liquid to the dry ingredients and fold together with a spatula. Once the dough becomes sticky you can use your hands to kneed it further. Coat you hands in some flour to stop the dough from sticking to your fingers.
Once well combined form the dough into a loaf shape and gently place it back into the mixing bowl. Now cover the bowl with a kitchen towel and place it into a warm environment. (Next to the preheating oven, on the heater or in the sun.)
Let the dough rise for at least 1 hour 30 min. It should have doubled in size and the should feel quite elastic. Try lightly poking it with your finger, the dough should bounce back into its original form. If it does its time to bake, if not let it rise a little longer.
Preheat oven to 350°F / 175°C and place a parchment paper on a baking tray.
Place the dough onto the baking tray and bake for about 1 hour. The bread is done when it sounds hollow when tapped. Let it cool completely before slicing.
Makes 1 loaf.
