Lemon Poppy Seed Muffins

You will need:

  • 1⁄4 cup vegan margarine, softened

  • 2⁄3 cup sugar of choice (I used normal Brown unrefined sugar)

  • 2 tablespoons of chia seeds mixed in 1/2 cup water

  • 1 1⁄3 cups flour

  • 1 teaspoon baking powder

  • 1⁄2 teaspoon baking soda

  • 3 tablespoons poppy seeds

  • 2 lemons, zest and juice

  • 1⁄4 teaspoon salt

  • 1⁄2 cup of vegan yogurt

  • 4 tablespoons lemon juice

  • 1 teaspoon vanilla

How to make them:

  1. Preheat oven to 170 °C and coat muffin tin with a little oil.

  2. In a large bowl, cream the margarine and sugar until fluffy.

  3. Add the soaked chia mixture.

  4. In a separate bowl, stir together the dry ingredients, poppy seeds and lemon zest.

  5. Add the dry ingredients to the creamed mixture and combine.

  6. Mix until smooth but don’t over beat!

  7. Spoon the batter into the prepared baking tins.

  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

  9. Cool in the oven for a few min. before removing to cool completely.

Makes 10 - 12 muffins.
