Blueberry Pancakes


Not only do they look amazing, but they taste amazing too!

I love experimenting and creating new pancake creations. There are endless possibilities.

This is why I try to make the little cakes as healthy as possible to start a perfect Sunday morning.

These guys are rich in antioxidants and can't be compared to the ordinary sugar dripping pancakes that we all know from TV.

But you know what?

These taste is even better! Trust me... They are amazing.

 

Low in sugar

Egg free

Soy free

Dairy free

 

For the Pancakes:

  • 1 cup organic flour

  • 1/2 cup coconut flour

  • 3 tbsp coconut sugar or agave

  • 1 1/2 cups plant-based milk

  • Pinch of sea salt

  • 1 tbsp of coconut oil

  • 2 tsp of baking powder

  • 1 cup of blueberries

  • Pinch of cinnamon

For the Sauce:

  • 1 cup of blueberries

  • 1/2 cup of water

  • A few blocks of dark dairy-free chocolate

How to make them:

  1. Sift the flour and the other dry ingredients into a mixing bowl.

  2. Add the liquids and mix well with a whisk until completely smooth.Then gently mix in the blueberries.

  3. Add 2 tbsp of the batter to a non stick pan and form small round pancakes. (Add coconut oil to the pan if needed)

  4. Stack golden pancakes on a serving plate.

  5. Melt the chocolate in a small pot.

  6. Place blueberries and 1/2 of water in a blender and blend until smooth.

  7. Drizzle the chocolate over the pancakes. Also run the blueberry sauce over the top.

  8. Decorate the pancakes with some fresh fruit or mint leaves.

  9. Dig in before they get cold!
