In the mood for a sweet and fruity taste bud explosion? Then you should definitely try these bad boys.
Doesn't matter if its Sunday morning or Wednesday evening, pancakes are always delicious.
I always try to make them the healthiest version possible.
So here is my recipe for Acai Raspberry Pancakes.
Low in sugar
For the pancakes:
1 cup organic flour (I use whole-wheat)
1/2 cup of coconut flour
3 tbsp sugar or agave
1 1/2 cups plant-based milk (I use cashew milk)
Pinch of sea salt
1 tbsp of coconut oil
2 tsp of baking powder
2 tbsp acai powder
For the sauce:
1 cup of fresh or frozen raspberries
Splash of water
How to make them:
Sift the flour and the other dry ingredients into a mixing bowl.
Add the liquid and mix well with a whisk until completely smooth.
Add 2 tbsp of the mixture to a non stick pan and form small round pancakes. (Add coconut oil to the pan if needed)
Stack golden pancakes on a serving plate.
Blend the raspberries and a bit of water in a blender until creamy.
Drizzle the sauce over the pancakes. (You can also melt some dairy free chocolate and drizzle that over the top as well)
Decorate the pancakes with some fresh fruit or mint leaves.
Dig in before they get cold! And remember to enjoy!
